It’s time to start planning our vegetable gardens. Greens like tatsoi, rapini, sweet potato leaves, and many kinds of herbs do exceptionally well in South Florida, and this traditional Greek greens pie, known as “hortopita”, is built for the task of handling the abundance of garden greens.

Learn how to make filo pastry by hand, source herbs from Fairchild’s edible garden, and finally, taste our deliciously aromatic, crunchy, and healthy creation. This is not the kind of filo you can buy in local grocery stores, and must be made from scratch. We talk about the versatility of Greek pies, the different kinds of filo pastry and when to use them, and share plenty of culinary wisdom to make this Greek staple accessible at home.

We’ll also visit the herb and vegetable garden at Fairchild, and discuss various techniques for growing and caring for our greens and herbs at home.

Due to COVID-19 social distancing protocols, this class will be led as a demonstration with volunteer involvement.

Please note that we will not use butter in these recipes – only extra virgin olive oil. Vegans are welcome.
