When it comes to tea, does age really matter? Absolutely! There are some types of high quality tea that will often be stored and aged just like a high quality wine. The tea leaves develop new and unique flavors because of the slow oxidation process that they undergo while being aged. And there are some teas that are meant to be drank with a year or two, like fresh early spring Japanese and Chinese harvests.
