In this hands-on cooking workshop, we make our own filo pastry by hand, pick herbs from Fairchild’s edible garden, and finally, we taste our deliciously aromatic, crunchy, and healthy creation. This is not the kind of filo you can buy in local grocery stores, and must be made from scratch. We talk about the versatility of Greek pies, the different kinds of filo pastry and when to use them, and share plenty of culinary wisdom to make this Greek staple accessible at home.
Please note that we will not use butter in these recipes – only extra virgin olive oil.
We will make one dairy-free greens pie, known as “hortopita”, and another more familiar spinach and cheese pie, known as “spanakotiropita.” Vegans and lacto-vegetarians are both welcome.
